Morel Mushrooms (Morchella sp.) 

Morels are among some of the rarest mushrooms found on Earth as they cannot be readily farmed. The exact conditions they grow in have yet to be fully determined; the only notable trigger to start the growth cycle morels is after a the presence of a forest fire. Morels have a nutty wood like flavour and an unique spongy texture that is prized among chefs in many cuisines across the world. The length of our Morel caps ranges from 2 to 14 centimeters and  2 to 6 centimeters in width after it has been dried. One of the notable benefits of dried Morels over fresh Morels is that the shelf life is considerably extended from a week, fresh, to five years, dried, without the use of any preservatives. While some dried mushrooms disappoint in terms of having their flavour intact after re-hydration, Morel mushrooms are an exception to this preconception as all of their distinct flavours and textures are suspended after the drying process.

HABITAT

One of Canada's most prized foraged treasures are it's Morel mushrooms. Canada's forests in addition to annual forest fires and timely rainfalls allow Morel mushrooms to flourish every year from the beginning of spring till the end of summer. Morels are carefully hand picked from recently scorched lands by harvesters in the wild forests in British Columbia, Alberta, Yukon, and the North West Territories. Due to the mysterious nature of Morels, the exact conditions required to commercially grow them eludes scientist and farmers alike. While it is widely known that forest fires are an essential step in the growth of Morels followed by rain, the remainder of the equation to grow Morels commercially remains a mystery. Therefore, all Morels from us are 100% organic and foraged from the wild woods of Canada.

Quality control and Drying process

Our wild Morel Mushrooms are put through rigorous quality control procedures to ensure that our product is of the highest standard. The mushrooms are inspected upon harvesting, once again prior to drying, checked after drying, and a final time upon packaging. In order to ensure our product lasts in transportation or storage, the morels are sun-dried in the open in order to lower the moisture content to approximately 12%-15%. Depending on weather conditions, our drying process may be modified in part or fully to a wood fuelled kiln in order to achieve the desired moisture content. Drying either through sun or wood fuelled kilns are methods known to ensure our prized Morel flavours are not altered in anyway when re-hydrated.

Rehydration

Our dried Morels are meant to be eaten after rehydration. They retain all of their unique earthy-meaty flavours after rehydrating; the leftover water can even be used to make a sauce for your pasta, gravy, and even soups. We recommend that you filter the water through a regular coffee filter to ensure that it is clear of excess particles. To re-hydrate the Morels, simply soak them in a bowl of liquid (water, chicken broth, beef broth or wine) for 30 minutes prior to consumption.
